Michael Halen spent the last twenty-five years working on Wall Street, including fourteen analyzing consumer companies. Early on in this role he noticed an important theme: scale matters. The largest chains boast wider margins and the ability to take market share with price points that smaller competitors just can’t match.
Michael was also a partner in a New Jersey deli, where he originally joined as a consultant and helped boost sales 15% the first year. The gain was fueled by sales and food cost analysis that enabled the restaurant to strategically raise menu prices and enter the catering business profitably. There he saw first-hand how big the disadvantage is for independent restaurants and small chains due to the higher prices they have to pay for everything from chicken breasts to cleaning products.
